Pepper Tuna
6 oz Tuna steaks [yellow fin tuna, black fin tuna,
skip jack tuna] enough to serve. Teriyaki sauce, Teriyaki
glaze, black pepper corns. Marinate tuna 20 minutes mean while
crush black pepper corns, roll tuna steaks in crushed black
pepper corns, place in hot cast iron skillet or on hot grill
and sear out side till rare or med rare, serve with glaze
wasabi and sliced pickled ginger. mouth watering! |

Fish Dip
10 lb amberjack, kingfish, sailfish, or blue marlin.
Caribbean jerk seasoning.
3 spanish onion.
1 cup minced garlic
40 ozs mayo
1 cup grain Dijon mustard
1 cup horseradish.
1 bottle Key West key lime hot habonero sauce [www.keywestislandstyle.com]
or any handy bottle of hot sauce.
Clean fish, sprinkle with caribbean jerk seasoning place on
smoker until done. Mean while cut up onion and place in food
processor, mince. in large bowl mix the rest with onions.
place fish in food processor mince and add to bowl mix and
enjoy! makes 15 pints FOR SMALLER PORTION 1 lb of fish use
1/3 onion 2TBSP garlic 4 oz mayo 1 TBSP horseradish 1 TBSP
dijon mustard 1tsp hot sauce. Freezes well. |
